If you have ever been hungry and traveling Route 22 in Pawling, you are no doubt familiar with Roseann’s Kitchen. Owner Roseann Martin is celebrating her third year of operation, and her food truck has become a staple within the local culinary community.
Roseann’s Kitchen can normally be found year-round at 993 Route 22, just beyond Native Landscapes and Garden Center and the Metro North stop for the Appalachian Trail. The food truck has thrived in this location. The clientele includes commuters, truckers, and hungry hikers looking for a rest and a bite to eat. “I’m doing exactly what I want to do, parking here during the week and doing catering and special events on the weekends,” explains Martin. “This time of year, we get a nice boost from the hikers. When we first started, we parked in Poughquag for about a week, then we found this spot. And we’ve been happy here ever since.”
The motivation to start a food truck grew out of Martin’s lifelong passion for entertaining and cooking. While she briefly considered a traditional restaurant, she found that the food truck was an ideal fit for her business plan. “I started looking into it, and I realized I didn’t want to be tied to one thing,” she says. “I get up at 5:00 a.m., and I start planning the menu for the day before I go shopping. I have always entertained, and I have a love for cooking. To me, it’s second nature.”
Roseann’s Kitchen operates out of a fourteen-foot food truck, built to fit her needs and purchased in North Carolina. The rolling kitchen features a six-burner stove, oven, a 36-inch grill, a sandwich prep area, a four-bay sink, fryer, refrigerator, and freezer. Martin and “Sous Chef” Lou Musella have also learned to make use of the limited dimensions of the truck’s interior. “We use every inch of space in there,” says Musella.
“I try to keep the menu varied, so it’s hard to have room for everything in the truck, but we manage,” adds Martin.
In spite of the limited storage within the truck, Roseann’s Kitchen still boasts an extensive menu, as well as specials that are always changing and evolving. The daily menu includes traditional fare such as hotdogs, hamburgers, Philly cheese steaks, fish & chips, and empanadas. The specials menu, which changes daily, features Roseann’s unique creations including Hawaiian Chicken, Pork-A-Licious, Chicken Avocado, and Fish-A-Ma-jig.
Fall and winter bring another dimension to Roseann’s Kitchen, when her homemade soups and gumbo will warm anyone’s heart. In fact, she has been told from a Big Easy native that her gumbo is “as good as back home.” She also has a “Gumbo List” that consists of customers who request a text message whenever gumbo on the menu. “Nothing is mundane here,” says Musella. “She makes every dish her own.”
Longtime customer Jon Edenholm of Amenia praises the cuisine of Roseann’s Kitchen, saying “everything is unique; the food is better than any restaurant.”
In addition to the normal location on Route 22, Roseann’s Kitchen has been present at numerous events in the region. The truck has been a part of Dover Day, Beekman Community Day, Touch-A-Truck in Patterson, The Wassaic Project, and most recently, Pawling’s Independence Day celebration.
Running a food truck is no easy task, but Roseann Martin and her trusty Sous Chef are up to the challenge and enjoy their place in the community. “I’m happy doing what I’m doing here,” says Martin. “We have a lot of loyal customers from Pawling and the surrounding towns, which I’m grateful for.”
